This Maitake Soy Sauce is brewed from hand-harvested locally grown organic mushrooms. These are blended with our organic soybean and wheat koji into a sea salt brine and then barrel fermented at our brewery for over a year. The maitake mushrooms amp up the umami flavor resulting in a super rich and delicious soy sauce!
