Yamana Brewery: Est. in 1716 and located in the Chugoku Mountains of Kyogo, the brerwery experiences warm interior mountain air brewery experiences warm interior mountain air and cool Seto sea breezes creating the "Tamba Fogs," ideal for growing rice.
Profile: A blend of "Okutamba" Junmal Nihon-Shu, Japanese sugar beets, and plum juice from Wakayama. Ume plums vibrant aciditity balances the lip-coating honey-like sweetness. Hints of persimmon, dried fruits, figs, and nuts add complexity that rivals the finest dessert wines.
