Vermicular
Back in 1936, the Hijikata family founded Aichi Dobby, a small foundry specializing in the manufacture of cast iron dobby looms—essentially industrial sewing machines—in Nagoya, Japan. Through 80 years of craft and a deep appreciation for the natural exquisiteness of ingredients, Vermicular is elevating home cooking into an art form which chefs of all levels can delight in.
Vermicular graphite iron is a unique element, known for being difficult to manipulate and for having the hybrid characteristics of exceptional heat conduction and durability. They created a new alloy from this iron that allowed us to improve our enamel process.
