They are developed with traditional craftsmanship by Yamawaki Cutlery based in Sakai, Osaka— the largest local knife craft city with a 600 year long history. 2 major challenges with Japanese knives are their lack of unique design and ability to maintain cleanliness. Edit Japan chose to dye their handles and sheaths with Indigo not necessarily for looks, but because Indigo is antibacterial and used to deodorize. The beautiful appearance is simply a lovely byproduct!
